Welcome!

This little blog started on our wedding website, which kept family and friends up to date on the planning and details. Of course this is where we will provide all of the recaps of the wedding and everything after. We look forward to keeping family and friends up to date on our lives here in Texas and all of the adventures we share as newlyweds!

Drab to Fab!

So yesterday for some reason the tan/cream color of my little cube here at work was starting to get to me....It was drab and really not "me".

Now yes there are articles out there in every business magazine and publication saying that putting personal touches on your work space is a big No-No...however I see my office as not one of those typical business offices.

The boys have a basketball hoop, at any given time there are stress balls being thrown across the room, and we have a Dallas Mavericks flag still proudly displayed after their victory (that or it's just been forgotten to be taken home).

So this morning I started on my "Cube Re-Vamp" and plan to take my work area from Drab to Fab over the next week or two.

Clutter and papers gone! I'm going for the green feel and going all electronic (or at least trying to) and hopefully adding some light pink hues and green to my little area. Here's my progress thus far....

I'll be sure to post updates as I go. Step one will be just finishing the pink and white draping around the front of my cube and then I plan to get some "girly" (pink and green) trays to keep papers rather than the ugly black plastic stacking thing that I have now.

Rene might laugh at my spending of $12 to change things up but I figure I spend the majority of my time here and have had the same surroundings for 3+ years why not change it up right?

Free Breakfast

Be sure to head over to Chick-fil-a for breakfast to reserve your free breakfast item for the week of September 6-10th (the 5th is already sold out).
Who doesn't enjoy a free breakfast?

Enjoy!

THE Wedding of the Year

Since I promised to give a little update on the major event (wedding) Rene and I attended on Saturday here goes. When I say that this was an “event” it really was. The wedding was for friends of ours who live in Dallas and we met through Rene’s job with Deloitte. The husband works at Deloitte as well and the wife owns a small boutique here in Dallas for breast cancer survivors.

The couple are 100% some of the most genuine and fun people that I know so please don’t think that when I tell you about the amazing wedding that they are stuck up or snobbish in any way shape or form!

The wife is from Longview,TX a town of around 80K in east Texas and her family in involved in lumber sales. Apparently the family is very well known in the town and this wedding was the event you wanted a ticket for – Rene and I were lucky enough to get invited.

I only have a couple of pictures because my camera wasn’t doing very well in the dark reception venue but here are a couple of the key points:

Guest count 600+

The church was packed and the reception was held in the Convention Center!

The catering was done by I think every local restaurant so there was something for everyone (Chick fil a, pizza, salmon, Diary Queen, and alcoholic sno-cones!)

It’s the first and only wedding I’ve attended that started on the dot at 7pm and finished up as the clock struck midnight—oh yea with a wonderful firework show as the new Mr. and Mrs. drove away!

An ice sculpture that of course the bartender poured your selected martini down to chill it before serving.

Add to that an amazing wedding cake, and flowers….

On yeah and the grooms cake that was a horn frog (TCU graduates!)

Best wishes to Crystal and Kelly – it really was an amazing wedding!

Back to School

Here's to another semester of Grad School where my lunch break will be spent reading and doing homework....is it time to graduate yet?

Monday....

A very happy birthday to my good friend Kimberly today!

She's turning the big 26 today (does that make us all in our mid-twenties now??)

I'll have to post a little later today about the amazing wedding we attended this weekend! By far the largest wedding that I think we'll ever go to and lots of fun!

It's Monday so its a busy day at work of course especially gearing up for a holiday weekend, and classes started for me again today too.

Lots going on for a Monday!

I must have it!

etsy!
I'll just let the picture speak for itself!

Pinterest Problem?

I must admit that as we get into the fall months I have started thinking about decorating the apartment for Halloween and Christmas-I know they are months away but I like to think about these things early to make sure I am ready!

Well due to the fact that I spend about 10 hours of my day in front of a computer at work, I read blogs and also of course as mentioned yesterday check out Pinterest to see what others are "pinning"....these are just some of the favorites that I have found...aren't they cute?

What I'm Loving Wednesday!

1. Pinterest Enough Said! I spend way too much time looking at all the fun stuff through the day!
2. Mini Weekend Getaway on Saturday! Nothing too big or luxurious but Rene and I will be traveling about 3 hours from Dallas this Saturday to Longview, TX for one of Rene's colleague's weddings. Along the way we'll also be stopping at
Enochs Stomp Winery it's apparently an "old world" winery in East Texas so we'll see what it's all about before heading to the hotel to get ready for the wedding festivities.

3. H&M has officially opened at the North Park Mall!!
However, as of last Saturday there was a 5 hour long line to actually get in and shop! Here's hoping that sooner rather than later I can actually step foot in the store!

4. Fall Colors! I love that there are so many great colors for this fall's wardrobe! Check out
Pantone for all the colors...my faves? Cedar and Deep Teal!

What are you loving this Wednesday?

Speed Reader!

It's amazing how fast I can get through books when I don't have to read text books at the same time! Over the past few days I have made my through 3 books and I am about a third of the way through a fourth!

Vampire Diaries: The Fury and the Awakening, Pretty Little Liars (PPL #1), Flawless (PLL #2) and making my way through Perfect (PLL #3)...too bad that classes start next Monday for me and I'll be slowing down on the reading.

Happy Monday!

Happy Monday! After a nice relaxing weekend Rene and I were up bright and early around 5:30 to take Stitch on a walk--we've been slacking and didn't wake up early at all last week to walk him so he was quite excited for his little walk this morning.

Of course Dallas is still super hot and in the triple digits, we are on track to possibly break the record for the most 100 degree days on record, I think that this morning we were at the 3rd highest year on record....here's hoping though that September brings a little bit of relief sooner rather than later.

Today is also the first day back to school in Dallas and most other parts as well-I don't actually start back to class until next week though so that's wonderful!

The first day of school got me thinking though about my "firsts" when it came to school.

First day of Kindergarten, my Mom, brother, and aunt joined me at the bus stop and video taped the whole thing. Waiting for the bus, getting on the bus, oh yes and then getting into the car and following the bus to Amos McDaniel Elementary and of course "embarrassing me" when I got of the bus and was walking into school and my little brother yelled my name from the car. Gotta love those home movies right?

First day of Junior High/High School -- I don't really have any specifics that I remember from either of these firsts! I am sure there was something that seemed special or dramatic about one of these but now looking back I can't really think of anything at all! It may have been that I was friends with older people from being involved with cheerleading and other activities so the transition wasn't too hard.

First day of College. After the 16 hour drive to Florida with mom, the long and hot process of unpacking things into my dorm room, and the car breaking down due to a recalled fuel pump my first day of college was pretty painless! I also had gone through sorority recruitment the week prior to classes starting at the University of Central Florida so I was already in a group of people that I could hang out with and that were in some of the same classes.

I loved school--though my opinion may have changed with that with Grad School and working full time ( I am counting the days til I finish)....but I must say that I do miss school supply shopping and new pens and planners! I'm a dork I know!

What I'm Loving Wednesday.....

A college sorority sister inspired me from her "What I'm Loving Wednesday" blog posts at Forever88 and decided that I would start joining in on the "what I'm loving" conversation!

Starbucks Drive-Thru

Early on a Wednesday morning to get through the day a grande-skinny-vanilla latte is just what I need....without dealing with the crowd in the store!

Restaurant Week in Dallas! After our delish dinner last Saturday we have another reservation for a Friday night "date" at 560 by Wolfgang Puck. I've been wanting to eat in reunion tower (photo below) since we moved here and this is the perfect change without breaking the bank!

yep, 560 is in the "ball" and it rotates slowly so diners get a great view of downtown Dallas!

It's officially football season and I get to root on my fave teams!

Having a wonderful puppy that wakes me up every morning!

And of course my wonderful hubby!

Recent Reads

Over the past 2-3 weeks I have finished 3 books so figured that I would share with you my thoughts on them.

First I read “The Help” by Kathryn Stockett— it was so good!

I would highly suggest reading it! Of course now I am hesitant to go to see the movie for fear that it will be ruined for me…nonetheless, the story is about a girl Eugenia “Skeeter” Phelan who returns to Jackson Mississippi after getting her college degree and is anything but the typical “southern belle”. She watches as the women in her hometown segregate themselves from the black “help” and continues their day to day lives of bridge club and society meetings and knows that she wants more in life.
She loves to write and wants to be a journalist but let’s face it, women don’t have those types of jobs in Jackson they are bank tellers or stay at home mothers. The story follows her as she secretly writes a book from “the help’s” perspective of working for the white families in Jackson. The story is filled with witty back story and is overall a fun yet eye opening story of the south in the 1960’s.

Book #2 --“Freedom” by Jonathan Franzen – this one I have some mixed feelings about.
While the reviews that I read prior to starting the book were great and stated that the work with an American Masterpiece of fiction…it just didn’t astonish me and it was actually a little hard for me to get into reading and I was happy to finish it when I did.
The story follows your “typical” middle-class American family in “today’s” world with a rebellious teenage son who questions adult authority, a wife who was a star while playing basketball in college then gave it all up to be a homemaker, and the husband who works as a lawyer and the Times writes an unflattering story about his which starts gossip among the neighbors and their thoughts of the whole family.
Politics runs throughout the whole book which may be the reason that I was not completely immersed in the book. I’ll admit that I like to read things that create a story that is fun to read or complete fiction and this just rung a little to close to current events and real life for me to fully enjoy. Was it well written yes! Was it something that I can 100% see what it was on the best sellers list for weeks and people rave about it yes! Would I re-read it, probably not, but it’s all your choice to make!

Book #3 –Vampire Diaries the Awakening and the Struggle by L.J. Smith. I started this on Saturday and finished it on Monday night before bed. This is a super easy read and since I love the Vampire Diaries on the CW I figured that this would be a good choice for some easy enjoyable summer reading. I will say though if you have watched the show it is 100% different. Lets start with the fact that Elena is blond and not a brunette…and Caroline isn’t really friends with Elena and there is a character that does not even show up in the TV series named Meredith.
I like the fact that it’s different though because otherwise I would know what’s going to happen next since the series is already into season 2! The story starts with the first day of school and Elena being determined to get Stephan Salvatore to notice here and fall for her and Stephan being amazed that Elena reminds him so much of someone from his distant past….you’ll have to read the book to see how it ends of course, or if you watch the show you have an idea of what happens of course but it’s different at the same time! I would suggest it to anyone who wants to read something that has a good story line and what else do you need to relax from the day to day life and school?

I love date night! Especially when it means a delicious dinner and finding a super cute dress marked down from $195 to $30 on clearance!!

Got to love Nordstrom's Rack for amazing finds like this! The dress even had a cute little train off the back, super fun and I can hopefully wear it into the fall season too!
Hope that you are having a wonderful weekend too!

Delish Meal Coming up Friday

Well August always means that Rene and I will be eating some tasty dinners with Dallas Restaurant Week! Each year high end restaurants around the area offer a price fixed menu ($35 per plate) and a portion of the proceeds go to the food bank.

The only sad part is the we usually only get to taste 2 of the locations and there are always so many to choose from! This year we have a reservation during preview week which is this week on Saturday and then another next week on Friday night.

I am quite excited to say the least! I love trying new places around town and without spending the typical $50-60 per plate cost!

Saturday we will be trying Bolla at the Stoneleigh Hotel in Uptown (which is just north of downtown Dallas). It will be a nice way to round out the week especially since Rene has been gone again this week--something to look forward to as the weekend draws near!

Does the universe have it in for me?

OK so this week is only 2 day in and it has been just pretty much a bad one to say the least!

(I apologize in advance for lack of punctuation, and run on sentences in the below rant)

Monday started off with a million and one things that I needed to get done at work where I spent the majority of the day "putting out fires" then came home realized that the cleaning lady didn't come clean the apartment as scheduled, so I feel like the apartment is a wreck....I go to the gym which is completely packed and I was only able to get in 25 minutes of cardio before my lecture, which was a total waste of 2 hours. Then I wanted to do some yoga but the on demand wasn't working so I gave up and went to the store to get a bottle of wine (the one highlight of the night)....then took a shower somehow broke 2 of my nails and of course since Rene is out of town the cat had puked on the carpet so I got to clean that up after a shower.

So here I was hoping today would be better....I was wrong. My body didn't want to get up this morning, then my coffee filter got messed up and coffee grinds ended up all through my tropical toasted coconut kona coffee (which is amazingly good) so was hoping to get some Starbucks. I hit every red light on the way to work so couldn't stop at Starbucks and had to deal with office coffee Yuck! Then the Internet was down at the office and I got to play catch up with emails on my phone for the first 30 minutes of my day. This was all before 8am.

So then I meet with my team and listen to the recruiters go on and on about wanting more training an insisting on me spending 2 hours to go over our standard contract which they could just read on their own. My director then tells me I'm spending too much time giving them piece by piece info and they can learn on their own, yet at the same time wants me to be more supportive and have an open door policy to allow them to express their needs....wow I am completely lost as to what I should be doing....dead end there!

Put more fires out all afternoon because a doctor just backed out of working confirmed shifts for the next four weeks and we have no backup, then chase down time cards, follow up on contracts and a million and one other things before heading home getting frustrated that the gym is packed and come home....

Thank the lord the on demand worked and I got a nice hour long yoga practice in to try to relax. I am starting to think the universe has something out for me there is no doubt!

When I have days/weeks like this I take a look at my zodiac it will usually allow me to at least pretend that yes the universe is out to get me but it'll look up....today I am not feeling that way, here are a few of the reasons my my past few days turmoil per the stars...

“Your normal steady pace usually wins the race, Capricorn, but today you might need to take some shortcuts. Jump on opportunities that seem to come out of nowhere, but don't feel like you need to commit to anything now. Take your chances and see where luck takes you”

August 9, 2011

“You're ready for dramatic change in your life, Capricorn. It isn't that you're dissatisfied with your career or personal life. Rather, you feel like you're missing out on something great, if you only knew what. Be receptive to whatever opportunities arise and explore them all. You may find the answers you seek through travel or more education. Bring a friend if you’re afraid to explore on your own”

“You may be tempted by an unrealistic fantasy about a relationship now. However, your idealistic dreams can actually stand between you and happier days. Acknowledging your attachment to one particular outcome is a good start if you're willing to make it less important. There's no need to go to extremes and deny your preferences if you can maintain a healthy perspective”

“You like to lean on conservative tactics when your life gets too crazy. Mechanically going through the motions is one way to buy time while things settle down. Unfortunately, reverting back to your old routine won't work now because something must change for you to feel satisfied. You may be tempted toward extreme solutions like turning everything upside down all at once. However, taking lots of tiny steps is a much better strategy than attempting one gigantic leap before you're ready.”

I am having some difficulties trying to figure out how these relate to my past 2 days….any thoughts?

I was half scared to look at my Wednesday outlook….but I did it anyhow…

Tomorrow:

You may be tempted by an unrealistic fantasy about a relationship now. However, your idealistic dreams can actually stand between you and happier days. Acknowledging your attachment to one particular outcome is a good start if you're willing to make it less important. There's no need to go to extremes and deny your preferences if you can maintain a healthy perspective.

Horoscope by Rick Levine, Tarot.com

You like to lean on conservative tactics when your life gets too crazy. Mechanically going through the motions is one way to buy time while things settle down. Unfortunately, reverting back to your old routine won't work now because something must change for you to feel satisfied. You may be tempted toward extreme solutions like turning everything upside down all at once. However, taking lots of tiny steps is a much better strategy than attempting one gigantic leap before you're ready.

Horoscope by Rick Levine, Tarot.com

A relationship may be a major source of stress now as battle lines are drawn, making it harder to remain civil. You might prefer sorting out your differences through cool and calm communication, yet you can easily slip back into engaging in the needless drama. Instead of being forthright and expressing all your feelings today, act judiciously. A little bit of discretion goes a long way to settle everyone's frazzled nerves.

www.horoscope.com

“The warrior within may be stirred today. You might also have some self-doubt about your actions, Capricorn. Stay confident that you're on the right path at all times. There may be a bit of tension in your world, but try not to get too worked up over it. This is just a passing phase”

At least there is a little light at the end of the tunnel per tomorrow’s outlook from Horoscope.com….This is just a passing phase, let’s hope so! Still so confused on the relationship stress and battle lines though—Rene’s not even in the same time zone this week…..

Do you ever look for a “reason” for how you day is going if it feels out of control?? Or am I just a complete crazy person? LOL

Tuesday Morning Fail

Sometimes no matter how motivated you are your body will tell you no. That's what happened to me this morning. I had every intention of getting up at 5am today, doing some yoga to get balanced for the day, and then taking Stitch on his walk before making breakfast and getting ready for work.

I was even wide awake at 4am! However, I should have taken that and gotten up at 4 rather than trying to go back to sleep....because when 5am rolled around, I just could not make myself get up. It was a bit of a Tuesday morning fail on my part....

Needless to say tonight now I'll have to make time for the typical gym work out and yoga and then hopefully as the sun goes down it won't be too hot around 9pm to take the little man on a walk.

I think sometimes that I should go without a morning plan, maybe then when my body wakes me up I'll take the hint rather than waiting around for the alarm clock...

Budget Buy!

With e-readers being something that you see almost everyone carrying around it's no surprise that Borders is going out of business. They were a little later to the game when it came to bringing out their own e-reader and Amazon and Barnes and Nobel along with the iPad have the majority of the market share.

So as we say goodbye to Borders what you should really be saying is Good Buy!

The store around the corner from our apartment hasn't marked down the inventory that much yet (around 30% off) but it's still a pretty good price of $5-$8 for a book. So I picked up a few teenie bopper books as Rene likes to call them....

The Texas temperatures of 100 degrees and above make it hard for my Kindle to work outside and it occasionally freezes because of the extreme heat so I tend to keep at least one paperback book to read by the pool or at the gym. So these will keep me busy for a while at least. We’ll call it my guilty pleasure of CW/ABC Family books….

Volumes 1-4 of the Vampire Diaries (each book has 2 volumes) and the first 3 books in the series Pretty Little Liars. Yes the characters may be set in high school but doesn’t everyone need a little escape every now and then??

The retail for the books were between $9.99-$16.99 and I walked out with all 5 for a total of $40.00 so around $8 each and saved about $20….not too shabby. I’ll be keeping a close eye out to see how low the prices go and hopefully will be able to get a couple of really good deals before the store closes its doors for good.

I would highly suggest that you check it out, even if you do like your wireless e-reader it’s always nice to have a back up book in case your battery dies or you don’t want to take your reader along to a specific place. Be sure to double check that your local store is still open though before heading out, there’s nothing worse than thinking you’re going out to find a deal and arriving to a dark empty location.

Also it's a great time to buy gifts for those people in your family that love to read or enjoy travel or coffee table books without spending a ton of money. Not only that but by the time the holidays roll around you'll forget you got such a great deal and will feel like you have even more $$ to spend!

Weekend Cravings

Typically Rene and I are very healthy eaters. Low carb, organic, lots of fruits and veggies and lean proteins make up them majority of out diet...but don't get me wrong we do our fair share of unhealthy eating too--this weekend we gave into temptation!

This weekend we decided to had a little mix. Friday night we went for a semi healthy vegetarian pizza to get that cheese delicious pizza fix and then also an overly decadent buffalo chicken mac & cheese!
Friday night Mexican pizza!
Ingredients:
Pizza crust
1 can black beans
crushed garlic
Red pepper
green onions
cherry tomatoes
hatch peppers (or jalapenos if you can't get hatch)
Jack cheese
lettuce

1. Combine black beans, garlic and red pepper in food processor and pulse to a smooth spread
2. Chop up your veggies!
3. Spread black bean sauce on the pizza and then add your desired veggies (all except lettuce)
4. Cover with cheese (as much or as little as you like)
5. Back until cheese is melted...approx 10-14 minutes at 350 degrees
6. Sprinkle with shredded lettuce and enjoy

*the beans add protein and fiber, we used a wheat crust so healthy grain, low fat cheese and lots of veggies makes a much healthier option of pizza on Friday night!

Now Saturday was a different non-healthy meal all together!
Buffalo Chicken Mac & Cheese!

Ingredients:
2 boneless skinless chicken breasts
1 pound macaroni (we used quinoa pasta as a bit of a healthy change)
1 cup hot sauce
1 cup half and half or heavy cream
2 Cups mozzarella cheese
3 Cups cheddar cheese
3 tablespoons butter
2 tablespoons flour
1-2 hot peppers (optional)

1. First grill the chicken and shred!
2. Chop the peppers if you are using them
3. Combine the peppers and chicken in a saute pan and continue to cook/warm
4. Add 1/4 cup of hot sauce to the chicken mixture
5. Melt 3 tablespoons of butter in a separate saute pan
6. add in 2 tablespoons of flour to the butter
7. Wisk in the cream
8. add 3/4 cup hot sauce to the cream mixture
8. Slowly add the cheese to the cream and flour mixture until smooth
9. At this time also bring your water to a boil and cook pasta to al dente

Now time to build the final product!
First start with a layer of pasta, then add your chicken mixture and then add the second half of the pasta
Then it's time to pour your cheese/hot sauce mixture over top

Add some bread crumbs if desired to add a little crunch.
Bake for 30 minutes at 350 degrees (allow to sit for 10 minutes before serving).

I would love to share a picture of the final look, however I didn't get to the stove fast enough as the 10 minute timer went off...Rene had already dug in!

It's always a bit hit and plenty of left overs for lunch, and in Rene's case breakfast on Sunday!
